Soft aroma that leans Nelson. Medium carbonation that mixes into a body that gives up the stage to flavor notes of grape & orange. Bittering is light, earthy & relegated to sip end. No aspect hangs around to dominate as much as mixing into a bright, clean & balanced offering start to finish.

 3 hops ( Chinook, Sabro & Strata)

 This begins with a mild West Coast aroma nuanced with light fruit & a malt presence.  Chinook bittering provides the entrance into medium carbonation with Sabro mid sip fruit notes. Holding the sip makes this more identifiable. Strata is our end to each sip giving herbal & spice aspects. Blending becomes apparent as this warms.

 The somewhat crisp body makes this lean a bit towards  a West Coast style when cooler & becomes closer to the hazy side thereafter


Emperor Dumpling WC 7%

2 hops   (Chinook and Vic Secret)  7%

 Semi dry fruit aroma.  Medium to high carbonation.  Chinook is the dominant hop and provides the expected bittering throughout,  Vic Secret gives the offering enough layering to provide balance. How do you find this hop in this craft.  Holding the sip gives you its contribution and blends the 2 nicely.  A softer body than some WC offerings 

Fans of this style will do well to give it a try

Finback (NY)

 SO MANY BEERS SO LITTLE TIME.

 2 hops  (Mosaic & Meridian)

High fruit aroma. DDHing ensures fruit flavors are immediate primarily orange & citrus consistently mixing with a light spiced bittering to end each sip. Body is full & cuddles with both hops in a warm embrace. Both hops are equal in their contribution to the offering.  ABV is apparent from start to finish fulfilling its 9% responsibilities in helping create a DIPA true to the style.

Every night DIPA 8%

3 hops (Mosaic, Meridian & Simcoe)

An all fruit aroma subtly deep but not dank.  Sip 1 gets you wondering about the above with initial & medium bittering being seemingly dominant but flavors of light berry, orange & nuances of lemon take over remaining out front & balanced from then on. Carbonation is medium & the body is soft which keep the hop flavor contributions getting better as you go. Bittering while present never again is the overwhelming factor you envisioned at the start  

HighLow DH 8.4%

9 hops...  Read the can on this one! DHing these hops you'd think creates a tropical bomb but some influences keep the balance. Deep fruit aroma from most of these hops.  The same in flavor with a spiced earthy bottom.  If you know these hops pay  close attention & you can identify almost every contribution. Soft body & light carbonation. All bittering is relegated to the backend. ABV appears there as well. Warmer preferred.
