Hop Butcher (IL) Cooler by the Lakefront IPA 7%

New

SO MANY BEERS SO LITTLE TIME.

 2 hops  (Krush & HBC 1019)

Floral aroma. Light carbonation & backbone.  Initial bittering quickly fades (or blends) into flavors of citrus & tropical that roll over top of the above. These layers create a more floral & flavored IPA as more flavor notes are provided. A lightly dry finish. Colder was preferred but warmer gives this offering a chance to bring hazy fans into this camp with the persuasive flavor

Hop Butcher (IL) Maxwell & Coney Hit the Road 7.75%

New

SO MANY BEERS SO LITTLE TIME.

4 Hops (Mosaic, Citra, Nelson & Maui Nelson)

Multiple fruit contributions in aroma & flavor to come. Medium carbonation & a soft body. Maui Nelson gives you a tropical grape aspect & provides entry to Mosaic ,Citra & Nelson flavor contributions. A very light bittering note works an ending balance though flavors never surrender their position of dominance.

Hop Butcher (IL) Dark Hedges DIPA 7.5%

SO MANY BEERS SO LITTLE TIME.

3 hops (Simcoe, Nelson & Peacharine)

Inviting bright peach aroma. Hold the sip to get an enhanced flavor  burst of the same with additional factors. A soft body gives Nelson its spot in the offering to provide the contribution of white wine aspects into the mix at every sip end with a lightly dry yet semi sweet influence. Light bittering keeps all the above in place. Any temp works with this craft

Galaxy Bowl 7.5% DIPA

 1 hop (Galaxy)

3 sip rule please.  High in myrcene oil Galaxy provides more enhanced fruit flavor & aroma over bitter.

Subtle herbal aroma underneath  a fruit bouquet. Light bitter beginning is immediately overtaken & balanced by peach, tangerine & citrus flavor that dominate going forward.  While the herbal notes & bittering are backround present they always recede letting maximum flavor dominate. The soft body helps in this aspect.

A well done representation of what Galaxy can impart

Gulf Coastal 8% DIPA

3 hops (Mosaic,  Anchovy  & Amarillo)

Don't freak out, it's not what you think.  It's an Anchovy hop.

Multiple fruit aromas from all hops. Lower carbonation & a spft body.  Bright citrus flavors are the major flavor contribution with pine & bittering hiding in layer providing the needed balance to complete the offering. A very subtle Mosaic earthy ending.

  Well balanced in all aspects

Beer Tree (NY)

Beer Tree (NY) Broken Compass Double NEIPA 8.3%

SO MANY BEERS SO LITTLE TIME

2 hops (Mosaic Cryo & Citra)

All citrus fruit aroma leads you into this playful offering. Flavor is the overriding contribution.  Smooth backbone boosts orange & pineapple flavors which brighten as this warms. Just enough layers of bittering & herbal notes to create the blend for a NEIPA. Cryo & doubling of the hops gives this more flavor. The 8.3% is a nice added kick.

Beer Tree (NY) Desolate Peak 10.4% TNEIPA

 No hop info

Feels like a Mosaic or Citra judging by a full aroma entrance.  Flavors of citrus orange & peach dominate the offering throughout in a nice soft body & light carbonation.  A light bitter ending completes but never competes for anything but balance.

ABV is well hidden in this enjoyable heavy hitter.  A 2nd might not be advisable ...

Time enough to last 6.5%

No hop info. Papaya, mango aroma. Light carbonation & bittering. Subtlety tart but mostly sweet & tropical in flavor enveloped in a soft body. Earthy spiced notes balances the offering & ends each sip. No one aspect dominates making this a well done representative in the NEIPA style.

Perhaps a bit more tart than hazy fans may like but not enough to avoid EXPANDING YOUR BEER HORIZONS

Days of Sun 7.2%

Light earthy aroma and a hint of upcoming flavors. Earthy Mosaic and Cascade bittering starts us off and immediately mix with all 3 iterations of Mosaic bringing out full fruit aspects that remain throughout each sip/  Carbonation is semi medium and blends everything together. Complete balance start to finish.  A well done NEIPA that deserves your attention
